Ingredients:
- 1 cup (225g) unsalted butter, softened.
- 1 cup (200g) granulated sugar
- 1 cup (220g) packed brown sugar.
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups (240g) all-purpose flour
- 1 cup (100g) cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon Melach Kosher Salt
- 1 1/2 cups (270g) chocolate chips (dark or semi-sweet)
- Melach Kosher salt flakes for topping
Instructions:
- Preheat the Oven: Preheat your oven to 175°C and line baking sheets with parchment paper.
- Cream the Butter and Sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated. Add the vanilla extract and mix well.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and kosher salt.
- Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fold in Chocolate Chips: Gently fold in the chocolate chips until evenly distributed throughout the dough.
- Scoop and Arrange: Using a cookie scoop or tablespoon, drop rounded portions of dough onto the prepared baking sheets, leaving space between each.
- Bake: Bake in the preheated oven for 10-12 minutes or until the edges are set but the centres are still soft. The cookies will continue to set as they cool.
- Sprinkle with Kosher Salt Flakes: As soon as the cookies come out of the oven, sprinkle a pinch of kosher salt flakes over the tops of each cookie. This enhances the chocolate flavour and adds a delightful touch of saltiness.
- Cool and Enjoy: Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
