DECADENT CHOCOLATE COOKIES

Ingredients:

  • 1 cup (225g) unsalted butter, softened.
  • 1 cup (200g) granulated sugar
  • 1 cup (220g) packed brown sugar.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1 cup (100g) cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon Melach Kosher Salt
  • 1 1/2 cups (270g) chocolate chips (dark or semi-sweet)
  • Melach Kosher salt flakes for topping

 

Instructions:

  1. Preheat the Oven: Preheat your oven to 175°C and line baking sheets with parchment paper.
  2. Cream the Butter and Sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated. Add the vanilla extract and mix well.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and kosher salt.
  5. Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Fold in Chocolate Chips: Gently fold in the chocolate chips until evenly distributed throughout the dough.
  7. Scoop and Arrange: Using a cookie scoop or tablespoon, drop rounded portions of dough onto the prepared baking sheets, leaving space between each.
  8. Bake: Bake in the preheated oven for 10-12 minutes or until the edges are set but the centres are still soft. The cookies will continue to set as they cool.
  9. Sprinkle with Kosher Salt Flakes: As soon as the cookies come out of the oven, sprinkle a pinch of kosher salt flakes over the tops of each cookie. This enhances the chocolate flavour and adds a delightful touch of saltiness.
  10. Cool and Enjoy: Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
